The Story behind our Pasta

Have a look at the photos to learn more about our homemade pasta made with Grano Duro Cappelli semolina: fregula, malloreddus, cringas, and cambales. This grain is a prized Italian durum wheat. It’s an ancient variety, selected in 1915. Recently rediscovered, it’s highly prized for its digestibility and nutritional qualities. Cappelli wheat is organic because it requires little fertilizer.

The Story behind our Cheese

The availability, flavor, and quality of cheese are strongly tied to the natural cycle of the cows and their diet.

Casizolu is a stretched-curd cow’s milk cheese. It’s made from the milk of cows raised year-round in the open. It’s pear-shaped with a more or less elongated neck, depending on the production technique used in the area.
